Shrimp Fried Brown Rice
Ingredients:
• 2 cups Cooked Brown Rice
• 1lb Shrimp
• 1/2Tbsp. Avocado Oil
• 1 Tbsp. Toasted Sesame Oil
• 1Tbsp. Minced Garlic
• 1Tsp. Fresh Ginger
• A bundle of Green Onions
• 1/2 Juice of Lime
• 2 Eggs
• 1/2 bag of frozen Peas & Carrots
• Black Sesame Seeds for garnish
• 1-3Tbsp. Braggs Liquid Aminos (or soy sauce)
• Salt & Pepper to taste

Instructions
1. Season shrimp with salt and pepper to taste. Heat avocado oil in nonstick pan and cook shrimp 2-3 minutes and set aside.
2. Lower heat to med-low and add sesame oil, green onions, ginger and garlic and cook for 2-3 minutes.
3. Add lime juice and brown rice. Toss together about a minute or two. Make a while in the middle of the pan and add eggs.
4. Scramble eggs through and through and add the shrimp back in and mix.
5. Add the peas and carrots and liquid aminos and continue missing everything together for about 2 minutes or until the peas and carrots are cooked through.
6. Plate and garnish with black sesame seeds and greens onions.
